4 sheets Puff pastry
250 grams Bacon pieces
14 – 16 Eggs
Salt & Pepper
Preheat Oven to 200 degrees Celcius
Grease casserole dish
Place enough puff pastry into dish to cover bottom and sides and prick with a fork.
Cook in preheated oven for 10 – 15 minutes.
Fry bacon in frypan while pastry base is baking in oven.
When pastry is ready remove from oven and fill base with bacon pieces.
Randomly place eggs carefully on top of bacon pieces trying not to break the yolks.
Slice tomato and place on top of eggs.
Sprinkle with Salt & Pepper.
Place 2 sheets of pastry on the top, remembering to prick with a fork. Decorate with left over pastry if you desire.
Place in oven and cook for approximately 30 minutes.
