Chicken and Potato Curry in the Slow Cooker

This dish will serve at least 10 people

3 – 4 large Chicken Breasts, Diced

Olive Oil

2 Tablespoons Curry Powder
2 Teaspoons mixed herbs
6 Large Potatoes, Diced
2 Cups Chicken Stock
2 Cans Coconut Milk
Salt & Pepper
1 Cup Grated Cheese
1 – 2 Cups Broccoli

 

Add a good splash of Olive oil, curry and herbs to a large pot or your searing slow cooker pan. Heat and add diced chicken breasts.

Once chicken is seared add diced potatoes and stir, trying to coat everything with the curry and herbs.

Add the coconut milk, chicken stock, salt & pepper, bring to the boil.

Remove from heat and add to slow cooker. Cook on high for 5hrs.

Add grated cheese and broccoli about 1/2 hour before serving.

Sprinkle with parmesan cheese and serve.
