This has to be the easiest chocolate cake to bake. It is great for birthday cakes, special occasions and large gatherings or functions. It is quite moist and can be covered with your choice of icing. I have made this cake for birthdays but also as an after school snack or for the kids lunch boxes, covered with basic chocolate icing.
2 cups plain flour
4 teaspoons baking powder
2 cups sugar
1/3 of cup Cocoa
1 cup milk
1/3 of cup butter, melted
2 teaspoons vanilla essence
Large square or round tin approximately 25cms. Baking paper. Measuring cups and spoons. Wooden spoon. Large mixing bowl. Electric Hand Mixer.
Preheat oven to 180 degrees celcius.
Place all ingredients together in the large mixing bowl and mix with wooden spoon until combined well. Then beat with electric hand mixer for about 3 minutes. Mixture with become smooth and will look lighter in colour.
Place baking paper in tin and pour cake mixture into tin. Place in oven and bake for approximately 45 minutes. Test by pressing middle of cake and see it is firm and bounces back. Or use a skewer and poke in the middle and see that it comes out clean.
Remove from oven and turn out onto cooling rack.
Once cooled, decorate as desired.
