I made this Fruit Punch for a New Years Eve Party and I really could have made double the quantity as I had a lot of guests who obviously really enjoyed it. It was great for kids as it is a non alcoholic fruit punch, though you could easily add champagne instead of the ginger beer.
2 1/2 cups water
3 cups sugar
2 1/2 cups pineapple
5 cups orange juice
2 cups lemon juice
1 cup strawberries
3 cups ice water
6 325ml bottles ginger ale or ginger beer
a few mint leaves
Step 1. Place 2 1/2 cups water in a pot and bring to the boil. Remove from heat and add 3 cups sugar, stirring until all the sugar is dissolved and it looks like syrup. Set aside to cool, you could place it in the fridge to cool faster.
Step 2. Cut fruit and juice lemons.
Step 3. Add fruit, juice and mint leaves to syrup when cooled
Step 4. Just before serving add ginger beer/ale to mix
